Is a vineyard in Denmark even possible? “Absolutely,” says Hansenite, Sofie Saerens, at her vineyard, TuseN Vin


Sofie Saerens, head of innovation in Fermented Beverages, is a woman with a passion. Passion for fermentation. The act of fermentation has always interested Sofie and has influenced her career choices as well as personal hobbies. Now, she and her husband have started a wine project in Denmark: A vineyard.


“The reason we started this vineyard is because fermentation is my big passion. I’ve been passionate about fermentation since I was very young, watching my parents make fruit wine. I have always seen this bubbling going on in the kitchen, and I was curious about what was really going on there. And that is basically also why I am working for Chr. Hansen… because the job I do is really my passion,” says Sofie.


New cool climate wine region


Denmark is one of the countries categorized as a new cool climate wine region, and it is due to climate changes that winemaking is moving up to the north. For Sofie this is an unique opportunity for her to better understand wine fermentation, and what is happening throughout the different phases.


“Everything we do in Chr. Hansen is taking place in the winery. But the part before this, we still need to learn more about: What is happening with the grapes? How are they growing? How is the soil and the climate influencing the grapes? These are things I will also learn here. And this is important to me, because I like to learn. But it is also very important for our customers. So I am looking so much forward to be able to bring back these learnings to our customers,” concludes Sofie.
