Cepari Winery is an emblem created from the passion for wine of oenologist Ilarie Prioteasa. Apprenticeship as an intern in the old cellars of Dragasani was continued at professional level in his own winery, designed by the modern standards of a constantly changing field. Investments in plantations, technology, people and promotion attempt to rewrite the wine history of continuity in the birthplace of Crâmpoşie wine variety.
The new location was opened in 2010 and is equipped with the latest technology for processing grapes and making quality wines. All components of machines and of storage capacities are made from stainless steel, and the ripening chamber includes Romanian oak barrels.
If modern machines tend to become a current approach to top winemakers, fermentation and storage vessels follow the same trend, as automatic temperature control is mandatory.
In addition, the winery possesses leveled emplacement of 20-60 hl tanks, as well as modern fermenters, including maceration under own fermentation pressure, controlled by the programmer.
The maturation hall was established especially for storing barrels, with a natural temperature control given by its location below the cellar, and it is situated between the tanks room and the bottling hall with semi-automatic flux.
